Quick and Easy Cinnamon Apples

Trips to the local farmer’s market this time of year are truly a test of self control for me as I am quite an “apple enthusiast”! The availability of apples in a myriad of colors and sizes whets my appetite for raw apples…cooked apples…and apples nestled in pies.  One of my favorite apple dishes is also the simplest; a blending of peeled, tart apples with just a few spices to create a dish that can be served as an accompaniment to an entrée or topped with ice cream for dessert.  Enjoy!

Quick and Easy Cinnamon  Apples

  • 3 Granny Smith or other firm, tart apples, washed, peeled and cut into slices of medium thickness
  • 2 tablespoons sugar
  • 1/2 teaspoon cinnamon

Arrange the apples slices in a 2 quart, covered casserole dish.  Sprinkle the sugar, and then the cinnamon over the apples and gently stir the sugar and cinnamon into the apples until evenly distributed. Cover the dish and microwave the apple mixture for 5 minutes.  Remove the apples from the microwave and stir the apple mixture.  Replace the cover on the dish and allow the apple mixture to cool while covered, 5 to 10 minutes before serving.

Note:  These apples can be served as a side dish to accompany an entrée, or they can be served warm with ice cream as a dessert.  Either variation is delicious!
